Ingredients:
220 g fresh egg tagliatelle or 170 g dried egg tagliatelle
Coarse salt and ground pepper
110 g unsalted butter
3 large eggs, lightly beaten
¼ cup of fresh herb mixture such as whole parsley leaves and chopped chives
Preparation method:
1- Cook the pasta in a large pan with salted water until ‘al dente’. Reserve 1/4 cup of pasta water and discard the rest.
two- Melt the butter in a large non-stick frying pan over medium heat. Then add the eggs and 1/2 teaspoon of salt and cook, without stirring, for about 30 seconds. Remove from the heat and stir a few times to break the eggs into large strands. The eggs must be undercooked and very moist.
3- Immediately add the hot pasta and herbs to the pan. Season with pepper and stir to evenly coat the pasta with the sauce and herbs. If necessary, add the reserved pasta water, a small amount at a time, to lightly cover the pasta. Divide the pasta between two plates and serve immediately.
