Salpoente presents its new tasting menu: between surprise and emotion

Back in Salpoente to test new flavors, we can say that there are few doubts about the quality of this establishment.

The group’s reputation Salpoente, in the Aveiro region, is already well established. Every year there is always anticipation of what new Salpoente will bring and, once again, it delivered a magnificent ode to its main inspiration: the flavors of Portugal reinterpreted with care and creativity. Behind every note, every ingredient, we find dedicated, passionate cuisine, and this is not the first time we have invited you to discover the general atmosphere of the establishment.

This month, Salpoente revealed to us a new Menu with audacity and subtlety, which joins the existing ones. I speak, therefore, of Salpoente tasting menu (€80 per person), Vegetarian menu (€55 per person) and the A la carte menu.

Here they are Tasting menu in the hands of chef (€65 per person), consisting of five key moments: a cold starter, a hot starter, the main course, dessert and an organic coffee accompanied by a petitfour. A menu that seems to make perfect sense and that will delight gourmet lovers who want to enjoy the creativity of the chef Duarte Eira without being dispersed with too many dishes.

A sweet waltz that begins with the cold starter (probably our favorite part of the menu): a Delicately smoked eel encased in oyster and lemon gel, with an extremely creamy beetroot puree on a bed of crunchy gingerbreadsomething that brings texture and balance to this dish full of surprises.

The hot starter follows, equally excellent: a Fava bean soup, egg yolk cream and homemade sun-dried tomatoes, complemented by scallop and chorizo ​​tartare. A highlight for this reinvented tartare that we loved for the smoky notes of the chorizo!

The main dish consisted of Grilled cod, extremely soft on the inside and well cooked, corn, confit onion, carrots in emulsion and pepper pureewhich we especially like the smoothness of.

If you don’t feel like eating cod, then we can recommend the Fish fillet in almond crust, which in itself already wins for being a breathtaking symbiotic combination. The dish’s delicate sauce was perfect and its cauliflower purée was very well prepared – this whole dish was a great surprise, truly positive.

Finally, a dessert that revisits the classics of Aveiro’s emblematic pastry, the Soft-boiled egg in cream to which a scoop of frozen yogurt, strawberry jam, red fruits and yogurt gelatin is added. A very well prepared and fresh dessert for us, who are not fans of soft eggs.

For those who do not prefer such a sweet option, we suggest the coffee-based dessert, as it is truly interesting and balanced. So we talk about the Cake and chocolate ganache, caramel mousse, cappuccino chocolate, coffee gel and meringues. But be aware that it has a very intense flavor!
