Around 1,500 kilos of folar were sold at the XXII edition of the Izeda Folar Fair, in the municipality of Bragança, which took place on Saturday and Sunday, according to an estimate made by the president of the board, Rui Simão. “More was sold than in the previous year. last year” stated the person responsible for the Union of Parishes of Izeda, Calvelhe and Paradinha Nova.

25 exhibitors participated in the Izeda Folar Fair, of which six were dedicated to folar, namely four from União de Freguesias, one from Macedo de Cavaleiros and another from Morais. The rest sold other products, such as sausages, handicrafts or agricultural machinery. “Most of our traditional folar producers, especially those in Izeda, only produce at this time of year. They are seasonal producers, they do not have the conditions to manufacture constantly, so it is difficult to make them aware of being present at this event”, explained Rui Simão.

The Izeda Region Development Association (ADRI) set the price of folar at 15 euros/kilo during the fair, but with no obligation to comply.

“Our clients are from the municipality of Bragança and neighboring areas, but we also have people who have been coming from Porto for several years. Most come on Sunday morning, mainly from the entire North region and Spain, because we have an exhibitor from Puebla de Sanábria and he invites some people”, added the mayor of the council.

The mayor of Bragança, Paulo Xavier, said that this is a representative fair for the municipality and one of the oldest. “It is already a brand that has been doing well for 22 years and has been growing. The fair will give visibility to this beautiful village of ours and, therefore, it has the full support of the chamber so that it can make a better and better path every year”, he highlighted.

The municipality contributes logistical and financial support to the organization of the event. “It is necessary to mobilize people to help their land. Especially because folar is a great tradition in the municipality and this fair makes perfect sense”, added the mayor.

Glória Rodrigues, producer of Paradinha Nova, says that the secret to good folar is the quality of the ingredients. “Butter, olive oil, flour, eggs and good smoked meat. Well kneaded and cooked in a wood oven. This is how to make a good traditional folar” described the producer who only produces at Easter time. “To maintain tradition and because I like participating in the fair” she added.
